Soğuk Kadayıf (Cold Kadayıf)

Soğuk Kadayıf (Cold Kadayıf) is a traditional Turkish dessert and is common in the Middle East and East European countries. Kadayif has an Arabic version called Kanafeh. It is usually confused with other pastries with kadayif on their names such as ekmek kadayif (bread pudding) or tas kadayif (stone pancakes). Although they are closely related as a family of pastries, kadayif typically refers to tel kadayif Toronto or string kadayif meaning “string pudding”. It is termed string kadayif because of the string dough used in making the desert. The string dough is made using a machine which pours out string dough down to a round plate made of metal – which makes the dough half-baked afterwards.

Soğuk Kadayıf (Cold Kadayıf)

In the old days, these string dough used to be made by the Usta or the master and cooked for the whole neighbourhood to share. Kadayif is typically served in a large metal plate called tepsi. Half of the dough is spread on the metal plate then sprinkled with crushed walnut or pistachio. The remaining half is then poured over the nuts and added with melted butter or margarine. After layering, the plate is then put inside the oven to bake the top into a beautiful reddish-brown. After baking, the syrup may then be poured over the kadayif.

This was one of the amazin recipe refered by Annem. Once you try it, you will never go to other desserts. It adds so much tastes to your tongue.

Ingredients

  • 150 gram Butter
  • 500 gram fresh kadayıf
  • 200 gram Walnut
  • Crushed Pistachios for garnishing.
For Syrup:
  • 3 glass granulated sugar
  • 5 glass milk
  • 8 gram vanilla sugar

Method

  • For the syrup, put the sugar and milk in a pot and boil over low heat for 15 minutes.
  • Add vanilla sugar and leave to cool.
  • Melt the butter.
  • Separate the kadayıf by hand. Pour the melted butter and make sure that it reaches everywhere with your hand.
  • Set aside half of the greased kadayif and spread the other half on a large rectangular baking tray. Sprinkle the walnut on it, place the other half of the kadayif evenly.
  • Press down by applying pressure with your hand or a cutting board.
  • Bake in the oven heated to 190 degrees until the top is browned.
  • When the first temperature of the dessert comes out of the oven, pour half of the cold syrup.
  • After slicing the dessert, the syrup will be completely absorbed. Pour the other half of the syrup and refrigerate.
  • Garnish with pistachios and Tadddaaaaaa.
  • Enjoy your dessert!!!!!!!.
