Recipe

Ingredients:
  • 2 large eggplants
  • 300 grams ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tomatoes, diced
  • 2 green peppers, sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili flakes (optional)
  • Salt and pepper to taste
  • Olive oil for frying
  • Chopped fresh parsley for garnish
Instructions:
  1. Preheat the oven to 180°C (350°F).
  2. Start by preparing the eggplants. Wash them and remove the stems. Cut the eggplants lengthwise into 1/2-inch thick slices.
  3. Sprinkle some salt over the eggplant slices and let them sit for about 15 minutes to remove any bitterness. Rinse the slices and pat them dry with a paper towel.
  4. Heat some olive oil in a large pan over medium heat. Fry the eggplant slices on both sides until they are golden brown. Remove from the pan and set aside.
  5. In the same pan, add a bit more olive oil if needed, then add the chopped onion and minced garlic. Sauté until they are soft and translucent.
  6. Add the ground beef or lamb to the pan and cook until it is browned and cooked through. Break up any lumps with a wooden spoon.
  7. Add the diced tomatoes, sliced green peppers, tomato paste, ground cumin, paprika, and chili flakes (if using). Season with salt and pepper to taste. Cook for a few minutes until the flavors meld together.
  8. Grease a baking dish with olive oil. Arrange a layer of fried eggplant slices on the bottom of the dish.
  9. Spread a layer of the meat mixture over the eggplants.
  10. Repeat the layering process until you use up all the eggplant slices and meat mixture, ending with a layer of eggplant on top.
  11. Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes.
  12. Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.
  13. Once cooked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley.
  14. Serve Patlıcan Oturtma warm with a side of yogurt or a fresh salad.
