Simple Biriyani

Ingredients

  • 1 lb. chicken, cut into bite-sized pieces
  • 2 cups basmati rice
  • 3 cups water
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 2 tsp. ginger-garlic paste
  • 2 tsp. biriyani masala powder
  • 1 tsp. red chili powder
  • 1/2 tsp. turmeric powder
  • 1/4 tsp. cumin seeds
  • 2 bay leaves
  • 2 green cardamom pods
  • 2 cinnamon sticks
  • 2 tbsp. oil
  • Salt to taste
  • Chopped cilantro leaves for garnishing

Method

  1. Rinse the rice in water until the water runs clear, and then soak it in water for 30 minutes.
  2. Heat oil in a large pot over medium heat. Add the cumin seeds, bay leaves, cardamom pods, and cinnamon sticks, and fry for a few seconds until fragrant.
  3. Add the sliced onions and fry until they turn golden brown.
  4. Add the ginger-garlic paste and fry until the raw smell disappears.
  5. Add the chopped tomatoes and cook until they turn soft and mushy.
  6. Add the chicken pieces and fry until they turn brown.
  7. Add the biriyani masala powder, red chili powder, turmeric powder, and salt, and mix well.
  8. Add the yogurt and mix well. Cook for a few minutes until the chicken is cooked through.
  9. Drain the water from the soaked rice and add it to the pot. Add 3 cups of water and stir well.
  10. Bring the mixture to a boil, and then reduce the heat to low. Cover the pot with a lid and cook for 20 minutes.
  11. Turn off the heat and let the biriyani rest for 10 minutes. Fluff the rice with a fork.
  12. Garnish with chopped cilantro leaves and serve hot.
