Ingredients:
- 2 Eggs
- 1 tea glass granulated sugar
- 1 tea glass oil (sunflower oil) or melted butter
- 4 tablespoon Cocoa
- 2 cups of all purpose flour
- 8 grams of vanilla sugar
- 1 teaspoon baking powder
- 1 cup Icing sugar (for coating the cookies)
Method:
- In a medium bowl, whisk the eggs and sugar with a mixer or a whisk. When the sugars dissolve and the colour of the mixture turns off-white, add oil and whisk for a while more.
- Sift the cocoa, vanilla, baking powder and flour into the mixture. Mix with a spatula until the ingredients are combined. The consistency of the dough will be thicker than cookie dough and will be more like brownie dough.
- Wrap the dough of your desired consistency in cling film and leave it to rest in the refrigerator for at least 2 hours.
- Remove your resting cookie dough. Shape your dough into walnut-sized balls and shape them into tiny balls.
- Coat the shaped cookies with icing sugar.
- Place your cracked cookies covered with icing sugar on the tray where you spread greaseproof paper. Bake in a preheated 180 degree oven for about 8-10 minutes in a controlled manner.
- After removing from the oven, let it rest at room temperature for 15-20 minutes and then serve.
- Delicious Brownie Cookie is ready to enjoy.
