ARROZ CON COCO

ARROZ CON COCO

Ingredients

  • 2 cups of rice
  • 1 can of coconut milk (400 ml)
  • 2 cups of water
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of salt
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of dried oregano
  • 1 bay leaf

Method

  • Rinse the rice in cold water and drain.
  • In a pot, heat the oil over medium heat.
  • Add the onion and red bell pepper and cook for about 5 minutes, until the onion is translucent.
  • Add the garlic, cumin, and oregano and cook for another 2 minutes.
  • Add the rice to the pot and stir until it is coated with the vegetables and spices.
  • Add the coconut milk, water, bay leaf, and salt to the pot and bring to a boil.
  • Reduce the heat to low, cover the pot, and let the rice cook for about 18-20 minutes, until all the liquid has been absorbed and the rice is tender.
  • Fluff the rice with a fork and serve hot.
