Ingredients
- 2 cups of rice
- 1 can of coconut milk (400 ml)
- 2 cups of water
- 2 tablespoons of vegetable oil
- 1 teaspoon of salt

- 1 red bell pepper, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of dried oregano
- 1 bay leaf
Method
- Rinse the rice in cold water and drain.
- In a pot, heat the oil over medium heat.
- Add the onion and red bell pepper and cook for about 5 minutes, until the onion is translucent.
- Add the garlic, cumin, and oregano and cook for another 2 minutes.
- Add the rice to the pot and stir until it is coated with the vegetables and spices.
- Add the coconut milk, water, bay leaf, and salt to the pot and bring to a boil.
- Reduce the heat to low, cover the pot, and let the rice cook for about 18-20 minutes, until all the liquid has been absorbed and the rice is tender.
- Fluff the rice with a fork and serve hot.
