Egg Fried Rice

Egg Fried Rice

Ingredients

  • 2 cups cooked rice (preferably day-old rice)
  • 2 eggs

  • 1 cup frozen peas and carrots
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • Salt and pepper, to taste
  • Green onions, sliced (optional)

Method

  1. Heat a large skillet or wok over high heat. Add vegetable oil and swirl to coat.
  2. Add diced onions and minced garlic. Stir-fry until fragrant and onions are translucent.
  3. Add frozen peas and carrots. Stir-fry until vegetables are heated through and slightly browned.
  4. Push vegetables to one side of the skillet or wok. Crack two eggs into the empty side and scramble until cooked through.
  5. Add cooked rice to the skillet or wok, and stir to combine with the vegetables and eggs.
  6. Add soy sauce and stir-fry for 1-2 minutes until rice is heated through.
  7. Season with salt and pepper to taste.
  8. Garnish with sliced green onions if desired.
  9. Serve hot and enjoy your egg fried rice!

Note: You can add other vegetables or proteins to this recipe as well, such as shrimp, chicken, or diced ham. Just be sure to cook them through before adding the rice.
