Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups fresh raspberries
  • Fresh Pastry Cream (please check my blog for preaparing by yourself)

Method

  • Preheat oven to 350 degrees F. Grease a 9-inch cake pan with butter or cooking spray.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the flour mixture to the butter mixture, alternating with the milk, until the batter is smooth and well combined.
  • Gently fold in the raspberries, being careful not to overmix.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 35-40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Decorate the Cake with fresh Pastry and the berries as per your wished garnishing ideas.
