- 2 cups basmati rice

- 1 onion, sliced
- 2 tomatoes, chopped

- 2 tsp. ginger-garlic paste
- 2 tsp. biriyani masala powder
- 1 tsp. red chili powder
- 1/2 tsp. turmeric powder
- 1/4 tsp. cumin seeds
- 2 bay leaves
- 2 green cardamom pods
- 2 cinnamon sticks
- 2 tbsp. oil
- Salt to taste
- Chopped cilantro leaves for garnishing
Method
- Rinse the rice in water until the water runs clear, and then soak it in water for 30 minutes.
- Heat oil in a large pot over medium heat. Add the cumin seeds, bay leaves, cardamom pods, and cinnamon sticks, and fry for a few seconds until fragrant.
- Add the sliced onions and fry until they turn golden brown.
- Add the ginger-garlic paste and fry until the raw smell disappears.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Add the chicken pieces and fry until they turn brown.
- Add the biriyani masala powder, red chili powder, turmeric powder, and salt, and mix well.
- Add the yogurt and mix well. Cook for a few minutes until the chicken is cooked through.
- Drain the water from the soaked rice and add it to the pot. Add 3 cups of water and stir well.
- Bring the mixture to a boil, and then reduce the heat to low. Cover the pot with a lid and cook for 20 minutes.
- Turn off the heat and let the biriyani rest for 10 minutes. Fluff the rice with a fork.
- Garnish with chopped cilantro leaves and serve hot.
